dc.description.abstractIn this research, Soxhlet extractor was used to extract Vitamin C from red pitaya. The effects of different drying temperature, and solvent polarity on the yields of Vitamin C were investigated. The drying temperatures used were 350C, 500C, 600C and 700C. The solvents used were methanol, ethanol, hexane and toluene. The obtained extracts were analyzed using High Performance Liquid Chromatography and Ultraviolet-Visible Spectrophotometer. It was found that drying temperature of 600C with methanol as solvent give the highest yields of Vitamin C which was 3.52 mg/L and 61.67% of antioxidant activity.en_US
