Bananas are widely planted and produce a large amount of waste after harvested. One way to reduce the amount of waste collection is by using the banana peels as a substrate in glucose production. The objective of this experiment is to study the best chemical pretreatment techniques between alkaline pretreatment and acid pretreatment with optimal glucose production rates under certain conditions. Comparisons were made between both pretreatment and were found that the alkaline pretreatment produce higher glucose at 121.5 g/L of 1% NaOH. Therefore, in obtaining higher glucose concentrations, pretreatment should be optimized. Composite Central Design (CCD) was used to analyze the results. The optimum condition for the alkali pretreatment was obtained when the weight of the substrate is 24.49 g at 50.39 °C for 30.03 minutes with the production of glucose 146.523 g/L. A model adequacy was very satisfactory as coefficient of determination (𝑅2) were 0.9253.en_US
