    Abstract
The extraction of bioactive compounds from rosemary leaves is normally conducted using harmful chemicals solvent, costly and time consuming. The techniques also is not environmental friendly, it requires more energy and use for hazardous chemicals. In this research, the total phenolic compounds were extracted from rosemary leaves. The rosemary leaves extracted by ultrasonic assisted extraction method using different solvents were water, methanol-water and ethanol-water. Ethanol-water was the best solvent for rosemary extracted. OFAT analysis was conducted and the optimum range for ultrasonic assisted extraction time were 45 min to 75 min and for temperature were 50oC to 70oC. The optimum conditions for ultrasonic assisted extraction were studied under three parameters. The conditions are including the ethanol concentration, extraction time and temperature. The parameters used for extraction were optimized using response surface methodology. The optimum conditions obtained from Design of Experimental (DOE) model were at temperature 70oC, at 75 min of extraction time and 70% of ethanol concentration. The yield of total phenolic compounds was obtained from this conditions is 1.341 mg GAE/ 100 g of extract DW.
