dc.description.abstractThis research was carried out to evaluate the B. racemosa leaf to be used in high fiber drinking water, where it can also be used in various industries such as nutraceutical industry, pharmaceutical industry and food industry. The physicochemical properties, proximate analysis, total dietary fiber, antioxidant determination and sensory evaluation of the high fiber drinking water from B. racemosa were established as a major ingredient in high fiber drinking water. The B. racemosa leaf was dried using oven and grounded into powder in order to use it to produce the high fiber drinking water. There were three percentage levels of B. racemosa leaf powder (0%, 1.5% and 3%) were used in high fiber drinking water. The physicochemical properties of high fiber drinking water evaluated slightly acidic of the B. racemosa leaf and there was a significant (p < 0.05) difference amongst high fiber drinking water (0, 1.5, and 3%). Besides, there was a significant (p < 0.05) difference amongst high fiber drinking water (0, 1.5, and 3%) in term of antioxidant properties. This indicated that the B. racemosa leaf consists high amounts of antioxidants which is good for human health. Lastly, the sensory evaluation of high fiber drinking water with 0 % of B. racemosa leaf selected as most favourable high fiber drinking water by the consumers while the high fiber drinking water with 1.5 % of B. racemosa leaf also can be accepted by consumers.en_US
