dc.description.abstractExtraction of anthocyanin from Hibiscus Rosa-Sinensis was expected to more economically technique which is only use distilled water as solvent based on polarity of the flower itself. In this study, the extraction of anthocyanin was conducted by using DOE to study the effect of process parameter such as time of extraction (70 min -90min), temperature of extraction (50˚C -70 ˚C) and solid-liquid ratio (1:4 -1:8). The optimum response condition was designed by RSM and couple BBD. The finding showed 0.525 g/ml of anthocyanin was extracted under the optimum condition at 80 min, 60 ˚C and 1g: 60ml. The qualitative analysis was conducted to analyze the phytochemical compound. The phytochemical compound presence in Hibiscus Rosa Sinensis is protein, steroids and sterol, glycosides and tannin. The stability of anthocyanin test was conducted by adjusting different pH (1-9) and temperature (3 ˚C, 21 ˚C, 60 ˚C and 90 ˚C). The result shows that acidic condition was most stable for anthocyanin while alkali was most unstable condition for anthocyanin.en_US
