dc.description.abstractThis research bassed on the utilization of jackfruit (artocarpus heterophyllus) inner skin as vegetarian patties for utilization of local fruit agro waste. Increasing in the production of jackfruit (artocarpus heterophyllus)fruits locally would be indirectly increasing the byproduct of this fruit which are under-utilized. The fruits which are usually more than 0.5kg only have about 20-50% of edible parts which includes the pulp and seeds. In that almost half of the fruit is known to be byproduct which is rich in nutrients yet under-utilized.en_US
