dc.description.abstractLipases are enzymes which catalyze the hydrolysis of triglycerides. In this study, the lipase was produced by solid state fermentation (SSF) using Aspergillus niger. In this work, the waste from extraction of coconut milk which is coconut dregs was used as substrate and supplemented with nutrients and olive oil during fermentation. The aim of this research is to optimize media compositions for lipase production by Response Surface Methodology (RSM), using Central Composite Design (CCD). The design was carried out to study the effects of parameters involved to obtain high production of lipase. In this study, concentration of carbon source (sucrose), nitrogen source (peptone) and inducer (olive oil) have being optimized. The maximum lipase production of 0.34912 U/mL was obtained after 96 hours by solid state fermentation at 30 °C in a media containing 1 % (w/v) sucrose, 0.2 % peptone (w/v) and 1 % (v/v) olive oil. The validation experiment was carried out to validate the model develop and the maximum lipase production was 0.35038 U/mL in optimum medium containing 1.08 % (w/v) sucrose, 0.20 % (w/v) peptone and 1.15 % (v/v) olive oil.en_US
