Abstract: | A machine that can accommodate a set of 4 stainless steel tubes and an electric oven was developed and tested for the preparation of modern “lemang”. This oven can run by using adjustable temperature equipment (thermostat) under controlled conditions. A single tube of product measuring 53 cm long, 6.0 cm in diameter and weighted about 600g. The use of stainless steel tube has replace the bamboo which enable lemang to be prepare in the building at reduced cooking time and producing a uniform and a better quality lemang. The happening of lemang making process during cooking using electric oven was analyzed by using Computational Fluid Dynamics (CFD). By using CFD software called FLUENT, the conditions inside lemang oven during the cooking process is analyzed and the differences between simulation results and experimental are compared. It was found that the results from experiment are quite similar with simulation results. |
