dc.description.abstractRecently, attention is given to the natural antimicrobial and their relationship with health benefits of consumers. Antimicrobial activity of certain substance to delay the microbial growth or to cause microbial death. Conservation of foods and perishable goods are normally done by using traditional way such as by refrigeration method. In order to prolong the refrigerated time, additive such as antioxidant and antimicrobial from synthetic origin are added to the food products. However, in recent year, the demand of natural product as additive in food has shown an increasing trend as consumers start to doubt the safety of using synthetic additive.many countries such as Japan and some European countries have reduced the use of synthetic antioxidants or antibiotic due to the carcinogenicity side effect.en_US
